Enjoying milk and cookies has always been a tradition in my family, but both my daughter and I often experience tummy troubles when eating and drinking dairy. That definitely makes it a problem to enjoy this special treat! However, with a2 Milk® we can enjoy my favorite cookie recipe – bacon chocolate chip cookies – without the discomfort.
Here’s my recipe for yummy and decadent bacon chocolate chip cookies:
- 2 1/4 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1 cup (2 sticks) butter, softened
- 3/4 cup granulated sugar
- 3/4 cup packed brown sugar
- 1 teaspoon vanilla extract
- 2 eggs
- 2 cups (12-oz. pkg.) semi-sweet chocolate chips
- 1 pound thick-cut bacon
Cook bacon to a crispy consistency, and set aside to cool. Preheat oven to 375° F.
Sift flour, baking soda and salt together in small bowl. Beat butter, granulated sugar, brown sugar and vanilla extract in large mixer bowl until creamy. Add in eggs, one at a time, beating well after each addition. Gradually beat in flour mixture. Chop up cooled bacon into 1/2 inch pieces (I use the food processor to make it easier.) Stir in chocolate chips and bacon.
Bake cookies for 9 to 11 minutes or until golden brown (depending on size of cookies).
