Baked Mushrooms with Parmesan and Thyme – How Pinteresting

My husband’s co-worker struck again! I woke up one day and we had tons more mushrooms sitting on the kitchen counter. So of course I had to find something new to do with them. 

The mushroom soup I made was heavenly, but we’re in the middle of a sweltering heatwave, and I just could not. do. soup. So I found this recipe for baked mushrooms from Damn Delicious and I decided to tweak it a little bit to meet our taste buds.

This recipe is super quick and easy, and it makes a great veggie side item for dinner. Hey, it even microwaves pretty well for leftovers as well! My only regret is that I didn’t make more of them because they were so delicious.

Ingredients:

  • 4 cups mushrooms, thinly sliced (I have no idea how many pounds this is, but it’s just enough to cover a cookie sheet.)
  • 4 tablespoons olive oil
  • 1 tablespoon lemon juice
  • 1 tablespoon dried thyme
  • 1 and 1/2 cup shredded parmesan cheese, divided
  • Salt and pepper to taste

Directions:

Spread out the sliced mushrooms on a cookie sheet or baking pan and toss with olive oil, lemon juice, dried thyme, salt and pepper, and 1 cup of shredded parmesan cheese. Place into a 400 degree oven and bake for 10 minutes. Remove from oven, mix, and add remaining 1/2 cup of shredded parmesan cheese. Bake for 5 more minutes.

Serve and enjoy!

    I love the combination of mushrooms and thyme, and the addition of lemon sounds heavenly! I’d leave out the parmesan to make this vegan, but I can definitely see this becoming a regular dish for me. Thanks for sharing!

    I could eat nothing but mushrooms and be totally happy. This looks so good. Love the addition of the herbs.
