Cucumber Salad – How Pinteresting

Hey ya’ll. As part of my 20 Wishes this year, I wanted to make one new recipe found through Pinterest per month. I’m not sure if I’ve made 8 new recipes this year so far, so I wanted to start documenting what I’ve made. I’m going to start posting my “pinteresting” finds every once in a while. This week I found this super refreshing cucumber salad – perfect for summer time.

I found this cucumber salad recipe on Pinterest from Lauren’s Latest, and I just had to try it. Just like Lauren, my Grandma used to make a similar version to it. I remember eating it when I was little, and even though I wasn’t crazy about cucumbers, I absolutely loved the salad.

I did modify the recipe a little to make it taste a little more similar to how I remember it. But I did manage to reduce it down to four quick and easy steps!

Ingredients:

  • 2 large cucumbers
  • 1/4 white onion
  • 1 cup white vinegar
  • 1/3 cup red wine vinegar
  • 1 cup cold water
  • 2 teaspoons salt
  • 4 tablespoons sugar
  • 1 teaspoon black pepper
  • 2 teaspoons minced garlic

Directions:

Peel and thinly slice the cucumbers. Layer first cucumber in the bottom of your container. Roughly chop onion and add on top of first cucumber. Layer second cucumber on top of onions. Whisk together remaining ingredients and pour over cucumber/onion mixture. Cover and refrigerate four hours (or more).

The longer you marinate the cucumber salad in the pickling liquid, the better tasting the salad will be! The result is a light and refreshing, sweet and tangy cucumber salad. I served the salad with pulled pork sandwiches and they were perfect together! You could also add the cucumbers to sandwiches, add it to a pasta salad, take it to a picnic…the possibilities are endless!

    This appears to be a recipe very similar to my sister-in-law’s. I think she just leaves a little bit out of the recipe so mine doesn’t taste as good! lol

    I have always loved cucumbers anyway but I have never tried these but I will now cause these look very good
